Q1: What makes you tick, what are you passionate about?
I love creating a new dish and seeing a customer’s face as they take the first bite. I love eating something and being so universally satisfied and in awe that you can’t even speak. I love creating new recipes working on cookbooks with my brother Max. Food, hospitality, making people feel welcome and happy - that’s what it’s all about. A good meal, good drinks and good friends gathered together. That’s a perfect life.
Q2: What´s your job?
I am the chef at Mile End in Brooklyn.
Q3: How did you end up there?
I had previously worked in the music industry/advertising in Los Angeles and had one foot in the cooking world but hadn’t been able to take the full plunge. At my brother’s urging I decided to man up and move to NYC to pursue cooking. It was a smart move and great advice. I’m lucky to have an older brother who can push and challenge me to keep getting better.
Q4: What’s a perfect Sunday like?
Wake up late. Read the NY Times while eating Russ and Daughters bagels and lox and drinking a massive glass of fresh squeezed orange juice. Hop in the car and blast tunes all the way to the rockaways. Intense game of scrabble on the beach. Swimming. Magazines. Good music blasting. Rockaway Taco. Drive home and take a nice late afternoon nap with all the windows open so you can hear the city. Wake up (and maybe shower) for a steak dinner with friends at St. Anselm. Get the ax handle. All the sides. Tons of bottles of wine. Move across the street to Commodore. Get very drunk. Do not go to work the next day.
